SUPER EASY CHICKEN QUESADILLAS RECIPE

Ingredients:
 
Shredded, cooked chicken (grab a rotisserie from the deli and shred the meat)
Flour tortillas
Shredded cheese
Salsa


Directions:

1. Put a flour tortilla on a plate. Spread 1tbsp of salsa on the tortilla. Sprinkle 2tbsp shredded chicken, and 3 tbsp shredded cheese. Cover with a second tortilla. If you like, layer another on top to make 2 tortillas.

2. Microwave to melt cheese and heat ingredients for about 60-90 seconds.

SUPER EASY CHICKEN QUESADILLAS

BROCCOLI-CHICKEN CUPS RECIPE


Ingredients:

2 cups (8 ounces) shredded cheddar cheese, divided
1-1/3 cups crisp rice cereal
1 cup cubed cooked chicken
2 tubes (10 ounces each) refrigerated biscuits
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3 cups frozen chopped broccoli, cooked and drained


Directions:

 
Place biscuits in greased muffin cups, pressing dough onto the bottom
and up the sides. Add 1 tablespoon cheese and cereal to each cup.
 
In a large bowl, combine the chicken, soup and broccoli; spoon into each muffin cup. Bake at 375° for 20-25 minutes or until bubbly. Sprinkle with remaining cheese. Yield: 10-12 servings.
 
Nutrition Facts: 1 serving (1 each) equals 205 calories, 11 g fat (5 g saturated fat), 31 mg cholesterol, 560 mg sodium, 16 g carbohydrate, 1 g fiber, 10 g protein.

BROCCOLI-CHICKEN CUPS RECIPE

BUFFALO CHICKEN WRAPS RECIPE

Ingredients:
4 boneless skinless chicken breast halves, cut in strips
1/4 teaspoon salt
1 tablespoon Tabasco sauce
1 teaspoon oil
1/2 cup finely chopped celery
1/2 cup crumbled blue cheese
1/2 cup blue cheese dressing
4 -10 inches flour tortillas
1 1/3 cups shredded lettuce
1/4 cup grated carrot

Directions:

Combine chicken, salt and tabasco. Cook chicken in oil 4-5 minutes. or until no longer pink and liquid is evaporated.
In small bowl combine together celery, blue cheese and salad dressing.
Divide cooked chicken among tortillas. Top each with blue cheese mixture, lettuce and carrot and wrap.

BUFFALO CHICKEN WRAPS RECIPE

BACON-WRAPPED BASIL CHICKEN RECIPES

Ingredients:

21 fresh leaves of basil
3 boneless, skinless chicken breasts (about 2 pounds)
12 slices of bacon
pepper (or crushed black peppercorn) to taste
    salt to taste

Directions:

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. In a small sauce pan of boiling water, blanch your basil leaves quickly (2 seconds) and drain them. Rinse the basil under cold water and pat dry.
  3. Slice open your chicken breasts and pound them to tenderize and flatten. Fill them with your basil leaves – about 7 leaves per breast, and fold it over. Season the outside of the breasts with salt and pepper.
  4. Starting with the underside of a breast, wrap your bacon around the chicken snugly. Depending on the size of your chicken, you might need up to 4-5 slices each.
  5. Sprinkle the outside of your bacon with pepper.
  6. Heat a skillet over moderately high heat. Once it’s hot, transfer your chicken to the pan (underside down, as to keep the bacon wrapped), and cook it until the bacon is crisp and golden on the bottom. Flip and repeat. This should take approximately 4 minutes for each breast, depending on how many can fit in your skillet at once.
  7. Roast your chicken in the middle of the oven until it’s firm and fully cooked. (It should take about 10-15 minutes, maybe longer). Remove your chickens and let them rest for 10 minutes before cutting.
